Lemon Bars

1Heat oven to 350 degrees F.

2Combine flour, butter, confectioners’ sugar and 1/4 teaspoon of the salt in a food processor. Process using on/off pulses until mixture resembles coarse crumbs.

3Pat dough evenly in an ungreased 9-inch square baking pan. Bake for 20 minutes.

4Combine eggs, granulated sugar, lemon juice, lemon peel and remaining 1/4 teaspoon salt in food processor. Process until well combined.

5When crust has baked 20 minutes, remove pan from oven and pour lemon mixture over hot crust. Return to oven and bake 20 to 22 minutes or until center is set.

6Transfer pan to wire cooling rack; cool completely. Sprinkle sifted confectioners’ sugar over top before cutting into squares. Serve immediately or store tightly covered in refrigerator or freezer.
