1To caramelize the onions: melt clarified butter in a large sauté pan over low heat. Cook onions, stirring occasionally, for 30-45 minutes, or until onions are soft and deep golden brown.
2Season onions to taste with black pepper and thyme.
3To make the sandwich: toast 2 pieces of sour dough bread on a dry griddle over medium heat until lightly browned. Flip bread and place 2 slices of cheese onto 1 piece of bread. Place the remaining slice of cheese on the other piece of bread.
4Toast bread until cheese is softened and begins to melt. Add caramelized onions to the piece of bread with the 2 slices of cheese. Combine both pieces of bread.
5Cook both sides of the sandwich until cheese is fully melted and bread is golden brown.
6Cut sandwich in half and serve.

1 Tbsp. clarified butter
1 large Spanish onion, thinly sliced
black pepper, to taste
1/2 tsp. chopped fresh thyme
