The Reef Bar and Market Grill opened Monday at the Outrigger Reef Waikiki Beach Resort in the former Shore Bird Restaurant and Beach Bar space, which closed last month.
Maui designer Roger Dean Gagon renovated the 12,000-square-foot space, which now has a lighter color scheme, updated furniture and an improved menu and seats 280.
“We had a quick turnaround, and wanted to keep the same fun, vintage feel of the restaurant while giving it a new look and introduce new concepts, like a morning buffet experience that will transform to a salad bar at night,” Kelly Hoen, area general manager for Outrigger, told Pacific Business News. “We lightened up the ceilings and added new ceiling fans and lighting, but we are keeping the famous belt fan that ran through the restaurant.”
The opening signals a new food and beverage direction for the hotel, which recently brought on three new individuals to lead the F&B department, including new Food and Beverage Director John Shelton.
Shelton will also serve as executive chef for the Reef Bar, which will still emphasize the grill-it-yourself component, but has added a butcher’s station next to the grill that will include a custom freezer stocked with high-quality beef, chicken, fish and vegetables, as well as wooden planks handcrafted by local craftsman Michael Olsen.
